<p>My mother will laugh when seeing this recipe&#8230; Even though I eat pretty much everything, was never a picky eater and have always been keen and open to try out new things, I used to &#8216;strongly dislike&#8217; zucchini. <img src="https://isabelessen.com/wp-includes/images/smilies/icon_wink.gif" alt=";)" class="wp-smiley" /> In whatever form or shape.</p>
<p><span id="more-1087"></span></p>
<p>However, taste develops and changes &#8211; something I&#8217;ve noticed many times in my life already.</p>
<p>&nbsp;</p>
<p><a href="http://isabelessen.com/wp-content/uploads/2015/04/Isabel-Essen_Healthy-Eats-_Zucchini-and-Feta-Fritters-01.jpg" rel="lightbox[1087]"><img class=" alignright wp-image-1093" src="http://isabelessen.com/wp-content/uploads/2015/04/Isabel-Essen_Healthy-Eats-_Zucchini-and-Feta-Fritters-01-1024x682.jpg" alt="Isabel Essen_Healthy Eats _Zucchini and Feta Fritters 01" width="239" height="159" /></a>And though I can&#8217;t say I&#8217;m in love with zucchini now, I&#8217;ve come to like them and use them more and more often in my own cooking in combination with other veg and ingredients.</p>
<p>Whether you like or dislike zucchini, this recipe certainly is a winner for everyone! The crispy combination of spices, spring onions, zucchini and feta cheese make for a tasty and light lunch or dinner that even your kids or other family members who aren&#8217;t keen on veg will enjoy!</p>
<p>See for yourselves and let me know how it went! <img src="https://isabelessen.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" /></p>
